Hi Leah
I was at TJ last night and found gluten free par-baked flatbread pizza crust and it is awesome! Just put on toppings that work for you and bake 6-10 minutes.

Ingredients:
Rice flour
Water
Sugar
Potato flour
Yeast
Olive oil
Tapioca flour
Xanthan gum
Salt
Garlic powder

Thanks, Tex. I guessed that going GF probably played a role, so what you're saying confirms that. I'm still not sure whether I should be concerned about the numbers, but I am otherwise feeling good so I guess I won't worry about it unless I start passing out ;) Thanks for the info!
