Ken, Others who write on this board more frequently and who can explain better than I will likely come in and tell you that diet is highly individual - it's sort of hard to know what to tell people (other than gluten seems to be a problem for most people, and most people have multiple sensitivities)...

What would be the theory/biological mechanism behind becoming achy with carbohydrates? I understand that sugar induces inflammation in large amounts and that those with arthritis often find that a lower-sugar diet can control pain/swelling, but beyond that, anyone know?
