Hi, Suzanne! You sound like me 6 months ago. Last week I hiked 23 miles in the Grand Canyon thanks in large part to the advice given on this board. You can get your life back! I would recommend getting the Enterolab testing done. I first encountered Enterolab testing on celiac message boards in 2005...

I'll look into that, Gabes. I do try to soak in an Epsom Salts bath about 3 times a week. It's harder to get to it in the heat of the summer, though.

Thanks!

Thanks, Nancy, Tex and Gabes! Since I figured out the MTHFR thing, and started supplementing with L-5-methylfolate and Sam-e, and I got serious about eliminating the offending foods from my diet, I have had good energy and have been able to maintain my fitness. My MC has been kept to a dull roar. My...

Report on backpacking in the Grand Canyon

Hi, all! I just got back from my rim to rim hiking trip in the Grand Canyon and thought I'd report what worked for me and what didn't. Needless to say, we are all different in what we can and can't eat, so take all of this with a grain of salt. I didn't ever get around to making venison jerky due to...

Thanks for the update, Jean. I haven't tried any jerky yet. Unfortunately, I got a fever/sore throat virus (first in many years) and was unable to go backpacking. The good news was that it was a great opportunity to change my diet while I was too sick to eat anyway. I'll try this recipe soon. Did yo...

Gabes, I want to thank you for posting that you were being tested for MTHFR mutations. I had never heard of it and googled it. You'd better believe it got my attention! With pre-eclampsia in my first pregnancy, anencephaly in my second and a sister with a history of miscarriages, I guessed that I pr...

I'm so sorry that you are having such trouble. How about trying turnip greens or mustard greens? They are more tender greens and I believe they are lower in oxalate. I just sautéed some mustard greens in the pan with my venison burger and it was delicious. Just a handful should do you a world of goo...

Oh, Leah! How awful! I am so sorry! I know you are strong and that you will cope, but it is devastating news. Like others, I know many breast cancer survivors. In fact I grew up with a breast cancer survivor. My grandmother had breast cancer in her 30s. She had a mastectomy of the left breast. Now b...

Thanks, Linda! Good explanation. I also enjoy cooking, which is a good thing. Running a gluten free kitchen and also accommodating my eldest son and his fiancé's food intolerances (no grains except for rice, no dairy, no coconut, no palm oil and meat has to be actual meat - no ground beef, ham or ot...

Great ideas, everyone! Thanks for helping! Leah, I have never stopped eating salads. I usually do well on them if they are not too complex. I often react to salads in restaurants. I believe they treat their lettuce with a preservative that I react to. I usually can't even finish the salad before I h...

I believe you are right, Tex. My understanding is that current research for diabetes is focusing on a constellation of genes rather than just one or two. I'm sure celiac is the same. There are probably more combinations than they have discovered thus far. From now on I will claim celiac status and b...

Turkey is a good idea. Maybe venison.

What on earth will I take backpacking this weekend? If I take trail mix, I will surely leave a trail.
Maybe some bison jerky? Sunflower seeds?

Kangaroo stir fry? Hmmm. Aren't kangaroos and possums related?

Enterolab Results = Eat More Possum?

Seriously! I am a little flummoxed about what else I can or should eat: (Already posted the positive results for gluten, dairy, egg and soy) Mean Value 11 Antigenic Foods 38 Units (Normal Range is less than 10 Units) While all of the foods tested can be immune-stimulating, the hierarchy of reactions...
