I wanted to report that I made your recipe the other day as fall is here and I am ready for soup. OMG! That is so good and like you said so easy. It has so much flavor and no onions etc. Thank you so much for this!

Is it ok to eat the skin on baby white or red potatoes if you roast or steam? Forgive me if it is already on the site but I have found nothing so that is why I am asking. I did find something about Sweet Potatoes and I thought they had a lot of fiber so was steering clear of those.
