3 to 4 pound beef roast. I get mine from Whole Foods, but will use Angus beef in a pinch. Trim all fat and cut into small bite sized/stew sized pieces.
One 2-pound bag of baby carrots. Cut carrots into 2 to 3 pieces, each.
One to two bok choy bunches. Cut bok choy into slices similar to celery. Cut green leaves into slices as well.
One large onion cut into 4 pieces for easy removal after cooking. (used for flavor only)
Three 8-ounce Pacific Foods organic vegetable broth containers.
Salt, pepper, and garlic to taste.
Place cut-up beef in the bottom of a 6-quart Slow Cooker. Season the meat as above. Place quartered onion on top of meat. Place carrots in next. Place bok choy on top of the carrots. Pour the vegetable broth in. Cook on low for 8 hours. Remove onion and discard. Cool and then divide into individual meal containers as soon as possible and freeze. Defrost each individual container in the refrigerator as to minimize increasing histamine levels. If needed, defrost slightly in microwave to make easier to put into a bowl for heating.
