Oven Fried Potatoes

Three to Four white or sweet potatoes.

Olive oil.

Sea salt.

Italian blend spices.

Cut potatoes into small pieces. Place on a large cookie sheet in a single layer. Toss with just enough olive oil to coat. Sprinkle with sea salt and Italian spices. Bake at 400-degrees, turning every 10 minutes for a total of 30 minutes.

This satisfies my need to crunch!

Arlene,

That sounds great - my mother used to roast a medley of root veg in a similar way, with rosemary, salt and olive oil (for those who can tolerate other root veg). I believe she did 'em longer and at a lower temp - I'm trying your way next time. (I'm actually eating potato chips as I type this... that crunch is a great experience.)
