A simple and delightful summer meal

A simple and delightful summer meal

Beets are low green for me on MRT, so I've started to include them in various forms in my meals. My favorite way to eat them is in a simple salad I've come up with:

Boil a couple (I use 3) fresh beets for about 40 minutes and cut them into smallish pieces
Peel and cut an apple of your choice into similar size pieces
Cut some nuts of your choice into small pieces (I use walnuts)
Mix the beets, apple and nuts in a bowl and squeeze half a lime on the mixture
Add a couple of tbs vegenaise (egg/dairy/gluten free from "Follow Your Heart")

I've also come to really enjoy snow crab, which I get at my local supermarket. They come in clusters that have been cooked and frozen, so all I have to do is drop them in boiling water for a couple of minutes and they are ready to peel and eat. I make a little vinegarette with applecider vinegar, celtic salt and EVOO for dipping.

This makes for a nice little summer meal for the likes of me, who cannot eat a big meal in a sitting, and can only eat a limited number of ingredients in one meal.

It sounds wonderful! And what a lot of lovely flavors you're enjoying - I'm so glad to see that this is working for you. Beets are a great idea - I need to have more things I can cook ahead and dip into later when assembling a summer meal. We could prepare a big beet salad and use it over the course of several meals...

I'll let you know how it goes - I don't have vegenaise, and am keeping away from "products" for a little while, but that sounds like a good one to know about.

I used to buy frozen tuna steaks at Costco - we could thaw one in the morning, and cook it that evening. Many of my strategies fell apart with MC, but you're reminding me of things I can do that will work.

Hi Sara,

I forgot to mention that I also use nuts in the salad - so I just edited the post. As you mention, the salad keeps well - so I had it again with chicken for lunch today. The flavors of beets and apples go so well together, and are so refreshing.

Bill's sister told me about Vegenaise a couple of years ago, and as I've been healing, I've been able to reintroduce it into my diet. To me it tastes better than mayonnaise. It does have some questionable ingredients for us MC'ers, but I seem to tolerate it well in small quantities.

I used to get the bulk chicken breast from Costco, as well as prawns and ground beef, but I react to their chicken and prawns, and cannot eat beef, so now I buy chicken at Vitamin Cottage (Natural Grocers), and do well with it. Fish and shellfish I get at my local supermarket.
