Recipe for Using Almond Pulp, Coconut and Almond Butter

Post by Gloria »

I found this recipe for using almond pulp, coconut and almond butter:
http://www.naturalnews.com/030700_Amaretti_energy.html

It sounds like a snack and would be good to have when away from home.

Thanks, Gloria! I have been looking for a recipe for 'savory coconut macaroons' - and of course many of them contain egg whites. It is one of my character flaws that I haven't even tried this yet, and already intend to do something totally different from what the recipe says... but I will let you know. I really do need something I can have in my purse that isn't sweet (not sure I'm right about my sensitivity to sweet/carbs, but sticking with it for now). And I just don't always have a steak of chicken thigh on hand, or a way to keep them cold!

I won't get to it right away (my niece has arrived!), but will definitely let you know my results.

Love,
Sara

Sara,

You're the person I first thought of when I spotted the recipe. Yes, do let us know when you've had a chance to adapt it.

Enjoy your visit with your niece!
