I haven't tried any of the recipes, but they look good.

You never know what you can do until you have to do it.
Gloria,
This site looks like a terrific resource (and just the thing to jolt me out of my post-almonds malaise). I often find that looking through these sorts of recipes will jump-start my brain, even if I don't have the exact ingredients on hand, and sometimes even if a recipe uses an ingredient that's on my "no-fly" list.
Thanks so much! I have some beautiful kale that deserves some TLC...
Love,
Sara

I thought of you when I saw the kale recipe. I knew you would like the website.

Yes, every treasured food eliminated leaves you mourning for a while. I'm still mourning my almond butter and ghee. I hope you can find another replacement for almonds.Sara wrote:just the thing to jolt me out of my post-almonds malaise

Gloria,
I decided not to spend *too* long in the dumps about almonds - because who knows, coconut could easily be next. I feel as though I'm more 'attached' to the non-biggie foods than I ever was to gluten or dairy... and if I'm not careful, I'll latch even more sentimentally onto the next one, which may wind up following eggs and almonds down some path where I never see 'em again!
And you are exceptionally kind to extend your sympathies - I still have a pretty unrestricted food list. I'm going to lay out a rotation to ensure that I don't eat certain foods more than once a week - focusing first on histamine-suspect foods, but also making sure I vary the meats and safe vegetables I'm using. I have a bunch of tactics - keep fruit to a low intake level, stick with no added sweeteners at all, and avoid over-using the foods I rely on most heavily - meaning, rotate more intentionally - and I hope this strategy will add up to letting me keep a broad and varied diet. But I'll take "healthy" over broad and varied, if I need to make that call.
The almond butter packets sure fit better in my purse than a giant bag of potato chips... but purses can be rotated, too!
Love,
Sara

Hi Gloria,
Thank you for this fine site.
She says,
"If you are newly diagnosed with celiac disease or gluten sensitivity then your belly may be growling in response to this huge shift in diet. You know, that blank stare into the fridge, the cabinets, the pantry, and gasp...even the freezer. I am hungry and what can I eat?
The early days and weeks may be challenging, but it will pass, and with time and knowledge you can jump into your kitchen and say yes, I can eat!"
It echoed the stage I find myself at.
Just reading the recipes opened up a new world of tastes to try!
