Tomato Almond Pesto with Zucchini Noodles

I made Cook's Illustrated Tomato Almond Pesto http://www.cooksillustrated.com/recipes ... =N1HSPFA00 and served it over zucchini "noodles" that I made on my mandoline with the julienne setting (I cut around the outside until I got to the seeds and then discarded). I softened the zucchini a bit in butter/oil. I still eat cheese but I think you could make this without. It was good.

I forgot to mention that I salted the zucchini and let it drain for an hour or two, rinsed and then dried them before softening them.
