Spontaneous remission is nice BUT.........
Trying to figure out what to eat and what makes me sick is almost impossible when these spontaneous remissions pop up.....
I have no clue what caused this one.... only thing that I have done differently is to ingest gluten...LOL

Have you thought of having gluten testing from dr. fine? It might be worthwhile for you, as gluten damage can occur even if immediate symptoms are not evident. Your particular case was a bit weird though too in that it was the prep that started it for you, so maybe you finally found the thing to slow your gut reflexes down and you have no remaining condition. Do you notice any change in sense of well being now that you are back on the gluten? How about bloating? When I eat gluten the bloating doesn't start for about 2hours and then the pain takes a day or so to start. Hard to work it out with reaction times like that.

Alice comes to mind as someone who is gluten-intolerant but does not get D from eating gluten. When her MC was first diagnosed she had malabsorption. After a year on the GF diet the malabsorption improved quite a bit, if I remember correctly. She used to say that she wished she would be symptomatic becuase she has to be even more careful with diet since she gets no reaction. She said that Dr. Fine had seen other cases like hers, so I don't think it's totally rare.

It's just hard to figure out exactly what it is that made you go from being in remission to not being in remission again. I have been there myself - and I also had the same thought you have; that I was still eating the same thing. I had to really start analyzing everything again from scratch with new eyes to figure out what it was that I added that stopped the remission.
I suggest that you start reading labels again - every time you eat something or make a meal - read the labels of the ingredients you are about to eat or put into your meal. This may very well lead you right to the offending item(s).
So much of our eating is mindless -that's the way we've been raised. We don't even think of what we are eating we just keep stuffing it in. Step back a bit and look closely at what you are eating. Clearly, something in your diet is causing a problem right now.
