This is really cool...easy mayo

Post by Deb »

For those of you that can tolerate eggs this is the easiest way to make mayonnaise I've ever seen. It literally took me a couple of minutes. Use pasteurized eggs if you're afraid of raw (my eggs were fresh from the farm so I wasn't too concerned). I used all olive oil and ended up with a delightful green hue from the color of my oil. I tried a half batch the first time and it didn't work so I went back and rewatched the video. I noticed his egg yolks were stirred and that he pulsed it at first for just a second or so. I retried it with a full batch and it worked perfectly. I used a pint wide-mouthed mason jar and my immersion blender fit perfectly...plus it was ready to store when I was done.
