Sharing a great dessert

I just had to share this wonderful dessert. It's a cranberry apple cake, GF, SF, DF, EF. I have made it twice and even my DH loves it. I just took a piece out of the freezer, warmed it up and put some DF ice cream on top. Yummy!! Wish I could have given each of you a piece.

That sounds great, Nancy - I just emailed it to my friend with the GF/SF/DF/EF kids. We're planning to do a food-intolerant Thanksgiving feast together, and this sounds like the perfect finale!

having something that you can freeze in portions and have it anytime you want is fantastic. How are you going with the Questran?

I have converted a couple more of my reciepes (that were passed to me by grandparents and aunties) thanks to the So Delicious Coconut milk, the awesome store for GF/DF/SF ingredients nearby to me just started stocking it and it has been a great milk replacement in reciepes.

Sara, how cool that you have friends that you will be doing food intolerant friendly thanksgiving!

Hi Gabes,
I use Silk almond milk in all my recipes and it works out great. Thankfully, we do have these alternatives for dairy.

I haven't used the Questran much since I'm back on 6 mg of Entocort. When I was down to 3 mg I was using about a half a packet every other day or something like that. It did help. I will use it again if needed.

Sounds great. I'm going to try it. I haven't baked ANYTHING since I started this diet!! But I can't afford all the ready-made stuff. I go to Whole Foods and leave with less than what I came for, because I can't bear to pay their prices! I'm determined to find time to bake.

I am definitely going to make this recipe. Sounds great! But, I didn't even know there was GF/DF ice cream. Could you tell me what the brand is and possibly where to buy it. I do miss ice cream so much and would love to try a substitute.

They have coconut milk ice cream, I think So-Delicious is the brand, in most grocery stores. I get mine at the health food store and one is "Luna & Larry's" Coconut Bliss non dairy frozen dessert which is very good and I like it a lot better than the So-Delicious. The other is Blue Mountain Cashew Creamery also non dairy. It certainly does make a difference putting that on warm apple cake. Almost tastes like the old days. Today I made some chocolate chip cookies that were amazing. I know, I do have a sweet tooth, but I can control it with only one cookie a day or one dessert a day. It's from the same website as the cake. I think making my own is safer and less expensive than store bought, I throw them in the freezer, take one out when I want one and they do last me for quite a while.

Thanks so much for the list of DF/GF ice cream. I'll be checking that out next time I'm at the grocery. I've always been a fan of ice cream, so I'm looking forward to this treat.

And, those cookies look wonderful, so I printed that recipe out just now.

You know, I think I'm making a lot of mistakes with this GF cooking, because I just tried to make a loaf of bread in my bread maker, and it turned out sad, partially cooked. I ate some anyway as did my husband, but it was discouraging. It was the one on the package of Bob's Red Mill Brown Rice Flour called Walrus Bread. I was so looking forward to a rare piece of fresh, hot baked bread, but somehow it failed.

I guess we learn as we go.

Garina,

As you are well aware, baking good GF bread is an art, and it's much more difficult than baking conventional bread, even with a bread machine. There are a lot of little tips and tricks that can help to make the project successful. Are you aware of these tips, by the gluten-free goddess?

Yes, Tex, baking GF bread must be an art, and I definitely have not acquired the skills yet. But, the GF tips site you posted is a great source, and I printed that out for re-reading and future baking, hopefully, with success.

The cookies Nancy baked from the glutenfreegoddess site really sound good to me. I absolutely have to bake them! Everyone here is so kind to help, and I'm very grateful.
