Gluten Free Corn Bread

Gluten Free Corn Bread

This recipe was adapted from an old Better Homes and Gardens Cookbook. I only substituted GF flour (Dee's blend) and added xanthan gum.

1 C GF flour
2T sugar
4 t baking powder
3/4 t salt
3/4 t xanthan gum
1 C yellow corn meal
2 eggs
1 C milk--I am DF so have successfully used hemp, rice or almond milk
1/4 C soft shortening

oven 425 degrees
mix flour thoroughly with sugar, baking powder, salt and xanthan. Add eggs, milk and shortening. Beat with rotary or electric mixer until smooth, about 1 minute. Don't overbeat. Pour into greased 9x9x2 bake pan, bake in 425 preheated oven 20-25 minutes.
If batter needs to be flattened, dip spoon or spatula in water and smooth--GF breads are notorious for assuming lumpy, strange shapes.
