GF Donut Muffins

GF Donut Muffins

1/2 cup white sugar
1 egg or (egg substitute equal to 1 egg)
1/4 cup DF/SF margarine, melted (Earth Balance)
3/4 teaspoon ground cinnamon
1/2 DF/SF cup milk
1 teaspoon baking powder
1 cup GF all purpose flour blend (add 1/2 teaspoon xanthan gum if not already in your flour blend)
1 teaspoon vanilla

Topping
1/4 cup DF/SF margarine, melted (Earth Balance)
1/2 cup white sugar
1 teaspoon ground cinnamon

Preheat oven to 350 degrees.
Line muffin pan with 9-10 paper liners
Mix sugar, margarine, and cinnamon in a large bowl.
Stir in the milk and egg.
Then mix in the baking powder, vanilla, and flour until combined.
Fill the muffin cups about half full.
Bake in the preheated oven 18 minutes until the tops are lightly golden.

While muffins are baking, place 1/4 cup of melted margarine in a bowl.
In a separate bowl, mix together the sugar with the cinnamon.
Remove muffins from the muffin pan and dip each muffin top in the melted margarine, and then roll tops in the sugar-cinnamon mixture.
Let cool.
There are variations that you can add :
1/2 teaspoon lemon peel for lemon struesal
1/2 cup blueberries
1/4 cup chocolate chips (Enjoy Life)

Those look yummy. I'm going to have to try making them. My freezer is going to full. :lol:
