That's a nice list. I can't do most of that. I am still looking. Not even close to finding something I can eat.

Wren,

We make more than one serving of most dishes, and I sometimes throw a cooler in the car if I'm out for a long time on a hot day. One of my favorites is 'meat cupcakes' (basically meatloaf in a muffin tin), because I can grab one or two or three, depending whether I need a snack, a meal, or a Real Meal. I'm weaning myself off my intense love affair with potato chips - which I never liked, or thought I didn't like!

We were never big on leftovers, so it's been a bit of a retraining process. I use a smallish lunch-type cooler, and I sometimes freeze one of these bottles http://vapur.us/ to keep it cold longer. I make it a point to eat any meat serving I've brought while still cold, and save apple/applesauce/carrots/etc. for a later snack, since they'll still be safe at room temp.

Hi Lesley,

Again I really don't know what you can and can not eat. But for breakfast during the week (I work) I make a smoothie with coconut milk and half of a frozen ripe banana. Then at work I snack on beef, chicken or turkey jerky that I make myself in a dehydrator. Because I still can tolerate fresh whole fruits or vegetables I also make fruit leather, fruit chips and vegetable chips all in the dehydrator. If you don't have one you can use your oven on the lowest temp.. I always have a single serve cup of apple sauce with me. Hopefully soon I will be able to increase my snack list to look like Zissles ( Thats Amazing) I am still unable or maybe just scared to try new things.

I have been gaining weight on Entocort. I haven't introduce anything new in my diet. As anyone have that happened to them? I need to gain a little weight back from all that I lost in the beginning but I don't wont to look like "Ms. Piggy" either.

Don't you need some protein for work?

I will try going the smoothie route. I have not being eating raw F&V. I need to heal a bit more. And when I do I am going to go back to juicing, so I don't get the fiber, but I get the nutrients.

Dehydrator - that's a nice gadget. I do dry things out in my little oven. I made some very slow cooked apples on it's lowest temp, which is MUCH lower than the regular oven. I boiled water with some brown sugar and cinnamon, poured it over peeled and cut up apples, and let them cook till all the liquid was gone. They were nice and brown and toff-ish.

I get my protein from the jerky I make. On Sundays I also marinate boneless chicken breasts and put them on the grill. I take them to work with me on Mondays so there there if I need them during the week. I also keep cans of Trade Joes Tuna at work. To change it around I will grill a Turkey breast or some shrimp (the shrimp never makes it to work, my family usually attacks them). My all time favorite and go to is Chicken soup. I make a huge pot on Sunday and freeze some for when ever I need it(which is almost everyday, its a comfort food for me).

Tuna is a no no for me. Way up on my "bad foods" list. Unfortunately, because I love it. So is chicken, and ditto )-:.
I made a great turkey soup yesterday. It really is great, but nothing can replace really good chicken soup. Still, it's very comforting. I need to separate it out and freeze it so it keeps.

Those are good suggestions, Zizzle. I may try some of those once I am feeling more secure. I have that big 'let's not rock the boat' feeling right now.

I also love, love, love the cupcake meatloaf idea.

That's definitely the safest strategy for keeping your recovery on track, and it goes right along with the old, "If it ain't broke, don't fix it" policy.

It's so much easier to experiment with a much lower risk of disastrous consequences, after we've been in remission for a while.

Hi Sara,

I have been making beef jerky for years. My kids love it and I wont let them put that store bought stuff in there mouths! Its very easy.....you wont believe how easy! Top round london broil (look for one with not much fat) and any spices you like. Freeze the london broil for about and hour or so (you don't want it complete frozen) but it is easier to cut. Cut the london broil in thin slice across the grain (slice should be about an 1/8 to 1/4 inch thick) I sometimes use an electric knife it goes really fast (watch your fingers). Place the all the meat into a zip lock bag add your seasonings that you like ( I only use sea salt for me, my sons like light teriyaki). Mix up the meat inside the bag so your spices are distributed evenly. Put in the refrig. for anywhere from 8 hours to 24 hours. I have a dehydrator now but I have made it many times in the oven too! Set your oven on its lowest setting (I usually do this right before I go to bed). Place the strip on any kind of rack you have (I used cooling racks for cookies) don't crowd the slices of meat. Put the racks in your oven and leave for 8 to 10 hours. Thats it! Its sounds like a lot but it really isn't or maybe I am just use to making all the time LOL. I am up to approximately 8 pounds a week!!! My sons eat so much of it and even my husband takes some to work. It works the same way with chicken and turkey but you need a lot of spices because they taste like nothing once they are dehydrated.
