I never thought i had a problem with butter. I am dairy free but never noticed a issues using it. But I am taking it out now since my Enterolab says that I am casein sensitive. The Earth Balance butter (soy free one) does it at least taste good?

Robin,
I think it's pretty good, my DH uses too with no problems. Worth a try.

Robin,
I haven't tasted it. There was something in the soy free one that I couldn't have. I have read so many labels lately that I don't remember.

Robin,

Earth Balance butter, IMO, is really good. I've used the fat free one for cooking for my crew, as well as at home, for years now and love it.

Update on the clarified butter.

I made it a week ago following Joe's directions. I only used a pound so as not to waste it if it didn't come out good. It was very easy to do and so far have not had any problems with it at all. I used it in mashed potatoes, pancakes, sauteed some veggies in it. It sure does taste good. My DH loves it. It's also a good way to get some fat in my diet.

I just wanted to let all know who may be fearful of trying it. Of course no two people react the same.

I had bought some ghee at the beginning of this journey at a price of $18.99 for a jar which equaled about 1 1/2 pounds. This was so much cheaper, just the price of a pound of butter.

So now I have an alternative to Earth Balance, which I will still use because I do like that too, just not as tasty as the ghee.

I really like the soy-free Earth Balance. It's tasty. The whole family uses it and hubby doesn't mind it at all. That said, I still prefer to put olive oil on steamed veggies. And I usually fry and saute with either coconut oil, grapeseed oil or bacon fat.

Z,

I bet you'd like avocado oil, too. I've tried two brands, and both were pretty good...

Sara,
I know you like chips. I found some in the health food store cooked in avacado oil. They were soooo good!

Nancy,

I'm liking avocado oil for cooking, too. AND thanks for reminding me - I have a bag of those chips in the pantry, and a very busy weekend... better start crunching!

Love,

Lesley, I am afraid of everything too. The clarified butter sounds great, but I am very fragile right now. Maybe later.

Earth balance soy free margarine is available at Whole Foods in Palm Beach Gardens. I haven't seen it in my local Publix but will ask them to stock it. If it is available at a store in Tampa it should be available on my side of the state as well.
I cook with a combination of butter and olive oil for some things and haven't noticed any problems. I used to make clarified butter years ago but haven't even thought about it in relation to MC. The earth balance is pretty good on a piece of toast. For lobster, I would definitely make clarified butter but I've never made lobster at home. Can't bring myself to kill the little buggers.
