I"m Back! Results of Entrolab tests, NOT HAPPY

I grew up eating quite a bit of game. My dad was a hunter and we ate venison, rabbit, squirrel, etc. I never cared much for the venison we had here (the tallow taste on the roof of my mouth was a turn-off) but I have since taken some cooking classes and one of the BEST meats I've ever eaten at a class was venison. I think there is a real difference in taste with how they eat. I never cared too much for wild rabbit but from what I've read, I'd probably like domesticated rabbit. Actually I didn't mind the squirrel (even though as a kid I had a pet squirrel named Frisky). He had to leave after he chewed up a bunch of wiring in the garage. I've eaten raccoon, bear, elk, moose, wildebeest, etc. so am pretty willing to try new things.

with the extra amount us MC'ers pay for basics like GF flour, coconut milk, and other MC safe ingredients, it is very easy to baulk at paying too much for meat portions.
What i try to look at is the per day meals cost or a per week meal cost (compared to my pre MC lifestyle of having alcohol, eating out for lunch or having takeaways).
If once a week i am going to have a treat and have a meat that is a bit more expensive then thats ok.
the GF/DF/SF cakes I bake that turn out similar to mild mud cake are the same price as buying them from a good quality baker.
the other important thing - if you find ingredients that suit you, that settle well and dont cause any type of symptom and it is under $10 for the meal serve then it is still very good value .....

What is that? An Oz specialty? You said CAKES that you made. All of them turn out like mild mud?
I LOVE your posts. You always make me laugh or touch something in me.
I can't eat many meats anymore. Lamb, beef, rabbit. That's about it. The cheaper, great meats that I love (poultry, pork) don't like me. So I just get what I can eat since I need the protein.
The GERD is still bad. It won't come under control. I might have to have the surgery redone. We'll see after I meet my new doc. I hope he is more open than the old one.

it is great to see you hanging in there and keeping your sense of humour.
I have been poorly the past few days (headaches, fatigue, joint aches, nausea and vomitting) Henry hiatus hernia is not happy and and the GERD has come back quite ferociously...
surely you have chocolate mud cakes over there?? which are a dense, smooth, rich type of cake?
my GF/DF/SF variations include pure cocoa butter(that is DF) and coconut oil.

Hi Gabes,
Sorry to hear your not feeling well! Since receiving my test results and removing all of the foods, I am doing much better. I still think I need to go further because I am still getting headaches, bloating and gas sometimes but not like before. I have been wondering if it could be spices I use in cooking?
Do you have a recipe for the mud cakes? I would really like a good recipe. I have one for a flourless one but it does have dairy.

Neither rice, nor any other gluten-free flour will come even close to matching the elasticity of wheat gluten, so that's a pretty tall order.
