I realize I have been the queen of NO (no grains, no legumes, no sweets, no fun)... so I thought I should 'fess up that I made dessert for my husband and me last night. I will definitely do it again, and when I refine the recipe, I'll put it up in Dee's Kitchen. But you real bakers could probably take this and run with it:

Cut up two apples, and squeeze lemon over them (if tolerated), and arrange in a small baking dish

Cream together: coconut oil (I'm guessing about 1/4 - 1/3 cup), "enough" coconut flour to remind you of dough, a pinch of baking soda, a very small amount of maple syrup, a shake of ground cinnamon (and I also added ground cardamom), and 2 generous handfuls of whatever nuts you tolerate. I chopped mine by hand, but you could also grind in a blender or food processor.

Gentle mush the mixture over the apples, and bake at 350. The total baking time was about 25 minutes - we pushed the temp up to 425 for the last few minutes, to brown and crisp the topping.

It could be sweetened more (but remember, I'm the queen of NO) - either in the topping, or by sweetening the apples themselves. I'm going to try this with pears later in the week!

That sounds tasty, Sara. I don't know if I've provided a link before or not but this woman cooks with no
grains and low carb and most everything I've tried has been quite good. She used to use sugar alcohols
for sweetener but has switched to chicory root. She does savory too. Her story is interesting. She and
her husband just adopted a couple of brothers from Africa. It was quite an ordeal getting them home.
She lives in Minnesota so I'm hoping to go to one of her events. She always has lots of goodies and I'd like to look at her cookbooks. http://mariahealth.blogspot.com/

Oh, Sara, that sounds wonderful, and the less sugar, the better I'd like it. I usually put less sugar in most anything I bake, so it sounds perfect.
