Lesley, thanks for egg info. I'm going to get egg substitute and a carton of egg whites. My son separates and only cooks/consumes the whites. So as you say about Adam, Cody can eat it if I can't ;)

Latest info on eggs is that the yolk is just as nutritious as the white, especially if the eggs are free range and fresh. I MISS eggs. So versatile and easy!

Thank you Everyone, for the great responses about crackers.

I have looked up all the sites listed here, plus I just ordered some of the Edward & Sons crackers, (thanks Kari) and am contemplating Crunchmasters (thanks Mary Beth). I always have to have crackers on hand, because I just can't eat soup without, at least, 7 or 8 crackers. Plus, being addicted to peanut butter, crackers and peanut butter are my snack of choice. I'm hoping my MRT will not show sensitivity to peanut butter...

Tex, if I ever get up the energy to make my own, I will try out your recipe, but that may be a while!

The last couple of days have been difficult with more pain and fatigue. When working in the corporate world, I found cooking to be theraputic and stress relieving. Yesterday, I tried the recipe Tex posted for Water Biscuits aka Saltine-like Crackers (in which he noted was from Beth Hillson's newletter and The Gluten Free Pantry.)

I used Bob's Red Mill GF Flour and very little salt within the combination of dry ingredients b/c I used salted butter. I found these crackers to be a very good replacement for my desire to eat breads and crackers. Great with soup/broths. My son liked them, we took some to Mom - and I made another batch last evening. Recipe is easy to make and a keeper!

Garina - A couple of days ago, I tried Bob's Red Mill GF Chocolate Cake Mix. I see you're EI; package gives instructions for an egg replacement. Since you enjoy peanut butter you may what to try this ..... I had no intention of "icing" the cake so baked it in a loaf pan and adjusted baking time. My son and I really enjoyed spreading a slice with peanut butter while cake is still warm. (Made me think of Reeses Peanut Butter Cups)

Thanks for trying the recipe and reporting on the results. These days, GF recipes are a dime-a-dozen, but when they're actually tested, and given a thumbs-up, by someone we trust, that makes all the difference in the world, IMO.

I hope your symptoms settle down again, soon.

Glad to hear Tex's cracker recipe is a keeper. I will have to try it. It hadn't even occurred to me to make crackers until he posted his recipe, but, why not!

The chocolate cake mix sounds delicious, and I do use egg replacement whenever possible. I never use icing, so peanut butter it is!

In the future and after more healing, I'll use this cracker to make fine cracker crumbs (with rolling pin) to coat baked chicken and for grandmother's meatloaf recipe. As for now, I feel these would be risky for my system.

BTW, to roll out the cracker dough, I used a rolling pin that my Grandmother hand-whittled in the 1920's.
(In case of house fire, "Grab the rolling pin! .....and the cracker recipe!!)

I use Quinoa instead of bread in my meatloaf, tastes great, but I use eggs in it as well.
Resolved MC symptoms successfully w/L-Glutamine, Probiotics and Vitamins, GF since 8/'09. DX w/MC 10/'09.

Just had some of the FOOD SHOULD TASTE GOOD olive chips you recommended. These are the best chips I think I've ever had...couldn't put them away! Thanks for the tip. I will be buying more.

Hey, Garina, did you know that there is a chocolate cracker from Food Should Taste Good? Saw them on Amazon and the reviews are fantastic. Some have said it tastes like an oreo! Can't find them at any store though. Might splurge and order them from Amazon.

I bought a bag of those chip "Food should taste good" in the olive flavor also. My husband open the bag and was reading the ingredients and said "you cant eat these they have corn in them" I never got to even taste one, him and my son ate the whole bag!! So I guess they were pretty good! I will have to stick with Edward and Sons rice crackers!

What do the ones you can eat have in them? I think we have the same sensitivities, don't we? I can't find any crackers I can eat.

Hi Lesley,

The rice crackers I eat are just made with brown and black rice. I enjoy the garlic and onion flavor ones. But they do have others. I buy them at Whole Foods.

hope you can have them! They are pretty good if you dont feel like making your own.

:sad: can't. Rice is out for me. I haven't found a way to make crackers yet. I make my bread, slice it thin, and sort of dry it out, which makes a sort of cracker, but it's not really. And as soon as it is wet it loses crispness. It doesn't keep as a cracker. That's the nature of the ingredients.
