Brenda and Lesley,
I just posted a thread about egg whites versus yolks. The yolks are actually the most nutritious part with respect to vitamins and brain-enriching fatty acids. They were my babies' first food. The protein (which you react to) is found in the whites. I think people with egg intolerance should be able to eat yolks, unless they are wildly allergic/intolerant, since you may get some white when isolating the yolk. Of course this will not really help for baking.

Saw that Z. Thanks. I seem to be able to tolerate egg in baked goods.

I most certainly don't need to put on weight, so I won't try the yolks alone, although I like them more than the whites, believe it or not!

Oh, I believe it. I've always loved the yolk. The white part just comes along with it. HaHa

Me, too. I've thought about cooking a sunny-side over egg, and just dipping my toast in the yolk. That was my favorite way to eat eggs. Wait - that was when I could eat bread. I'll have to get those fantasies out of my head.
