GF/DF/SF Sweet & Sour Chicken

GF/DF/SF Sweet & Sour Chicken

1 small can pineapple chunks in juice
1/2 cup baby carrots, quartered
1 sweet onion, chopped
3 garlic cloves, chopped
1 red pepper, cut into 1" pieces
1/8 teaspoon ground ginger, optional
3 boneless, skinless, chicken breasts, cut into 1" chunks
1/4 cup "mock" soy sauce, recipe to follow
1/4 cup brown sugar
1/8 cup arrowroot
1/8 cup water
Drain pineapple, reserving the juice

Make the "mock soy sauce:
3 tablespoons molasses
2 tablespoons white vinegar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon toasted sesame seed oil
Now add the brown sugar and pineapple juice to the "mock" soy sauce mixture
Take the cut up chicken breast and put it in a ziploc bag and take 1/4 cup of the soy sauce mixture and pour over the chicken
Let the chicken marinate 20-30 minutes

In a large skillet add 2-3 tablespoons oil and turn to medium heat
Add carrots, onion, garlic, red pepper and pineapple chunks
Saute until the veggies are fork tender
Take out of skillet, put into a bowl and cover with foil

Add another 2-3 tablespoons oil to skillet and turn to medium heat and add the drained marinated chicken
Cook chicken until nicely browned and no longer pink
Add the veggies to the cooked chicken in the skillet
Pour in the soy sauce mixture
Make a slurry out of the arrowroot and water
Add the slurry to the skillet and stir until heated.
