Chilly & damp in Ohio today, so I decided to make soup!!
Kluski Noodles
1-1/2 cups GF flour mix
2 Eggs
1/2 teaspoon xanthan gum
1/2 teaspoon salt
Water
Sift the GF flour mix and on a floured surface make a well in the middle
Add the eggs and salt
Start out with a couple tablespoons of water and mix and knead
Keep adding water and kneading until you get a a dense dough. Not sticky.
Then roll out on a floured surface to a 1/4 inch thickeness.
Cut with a noodle cutter or a pizza cutter.
Let the noodles dry for a good hour.

The noodles are the real deal and so easy to make.
You just mix the ingredients and roll out onto a floured surface as thin or thick as you like.
Cut them with a specific noodle cutter or you can use a pizza cutter.
Let the cut noodles set for at least an hour if you are going to use them that day or let them dry longer and then put them on a cookie sheet, pop it in the freezer for 15-20, take them out and put in ziploc bags and freeze.
