Here's a study showing that oral immunotherapy for food allergens can indeed reduce the IgE reaction (and most symptoms) to the food, but it does nothing to prevent the ongoing intestinal inflammation caused by the food allergen. This is evidence that even for those people who "outgrow" food allergies, they should still not eat the offending food proteins.

Here's another study that found 25% of IBS patients had food hypersensitivity, as measured by tryptase and eosinophil cationic protein (ECP) in the stool.

Wow! Thanks for that first reference. I've been looking for a reference to support my claims about that issue, but as you know, if we don't happen to select the correct key words for the search, either the result we're looking for is buried behind hundreds or thousands of other hits, or we miss the boat completely.

Aha. Proof. How many times have we been asked by well-meaning friends and family, "Well, if you keep eating it, won't you develop a tolerance to it?"

Or gotten comments like: "You were [age] before you started having problems. I bet if you go back to eating it, your body will adjust and you won't have problems any more."

It will probably be about a month. I'm still adding editing changes and after that I'll need to give it a final going over to make all the paragraphs and sentences fit the pages correctly, and add an index and a couple of other things.
