Leah, I love it too and seem to tolerate it okay. I've had some "iffy" corn things from time to time (even popcorn can bother me a bit at times if I eat too much) but I've never noticed a reaction to fresh corn. It was my dinner request for my 8th birthday. I ate 8 ears of it. The carb addiction goes back a long time.
Remember that with immature corn (IOW, corn in the roasting ear stage) the carbs are in the form of sugar. The sugar isn't converted into starch until the ear matures and dries down (after the shuck turns brown).

Unfortunately, you're most likely reacting to the protein in corn (zein), not the starch.

I think I am going to give it a try- maybe half an ear. I can tolerate about 2 cups of popped corn if it's natural and low fat, so I'm hoping I can do this. Wish me luck. ha ha ha
I for one have really never been able to eat corn without a reaction so I just avoid it along with many other things. No sense aggravating the system more.
