Easy fish soup

TJs has cod pieces for just over $3 a lb. I bought a can of clams and a bottle of clam juice (MRT said clams are fine for me, and they haven't upset me yet).
Sauteed onions and carrots olive oil, added about a tablespoon of potato starch to thicken it, added a large peeled and diced potato, and then the clams, the juice and 2 cups of coconut milk.

I let it cook for a few minutes so soften the potato, and added the cod pieces for another 10 minutes or so. Season with salt and pepper to taste.

Easy, cheap and delicious.

Thanks Lesley for a good idea of a new dish to try. Fish soup is an idea I would not have thought of but it sounds lovely. Glad you were able to tolerate something so nutritious!

It's really good!
The fish soups I have made usually demand making fish stock and cooking things in order, and all sorts of finicky stuff. This was SO easy, and cheap. I just saw that the cod pieces are $3.47. Clam juice and pieces are not so cheap, but you only need one can of each. This recipe easily feeds 4 people, and, as you say, it's very nutritious without being heavy.

Could you eat it Gloria? You would have to use a different milk since coconut doesn't agree with you. Rice milk should be OK, but use more potato starch or another starch that you like (and likes you) to thicken it to taste.

No, I can't eat fish because it's a high-histamine food. I don't really like most fish, anyway, but I used to enjoy tuna fish with sandwiches and in a macaroni salad. A tuna-macaroni salad was a nice take-along lunch in a cooler.

I can't do tuna at all. I can only do the lighter, white fish, and clams. Shrimp are out of bounds for me.
