corn experiment

Just thought I'd update on the corn on the cob experiment. I ate half an ear. A little discomfort followed. About two hours later I was a bit gassy. Nothing major. No D this morning. My conclusion is I probably shouldn't eat it, but i won't freak out if I am at someone's house or something and there is a bit of corn in a dish.

PS I'm bummed out that I just realized that the hot/sweet mustard I LOVE has wheat in it ( Beavers) :(

Hi Leah,

Thanks for the report on your corn test! I havn't had corn in 13 months and seem to be ok with all other fruits and veggies now. My guess is, like you, I'm probably ok with corn in moderation. My problem is the "in moderation" part for me. Florida corn on the cob is ok but not like Maryland corn on the cob which is a 10 so I think I'm going to hold off and test with a 1/4 or 1/2 of an ear sometime this summer when I'm up in Maryland. Thanks for the update as I now won't be as stressed out to test. Brandy

You are right! That is why I'm not going to test with Florida corn. By the way I'd probably do ok with my nut tests if I only ate 6-8 nuts at a time. My problem is I always eat a "container" of nuts. Eating a container of nuts does not give me "good results." I'm gonna stay off of nuts until year end and then restest then. Maybe I'll have some sense of moderation then but probably not. Brandy

I have the same problem. :lol: Interestingly, I seem to be able to tolerate Smucker's Natural Peanut Butter, but I have problems with "unnatural" brands, and I have problems with the nuts themselves.

Thank goodness nuts don't seem to bother me. I just have to chew them well :)

I practically live on corn now that hubby insists we buy corn instead of rice pasta. Add to that the rediculous amount of corn chips consumed in my household, homemade popcorn for the kids (I cook in coconut oil!), my Envirokids Peanut Butter Puffs, tacos and tostadas (I am Latin American after all). O generally buy high quality chips that advertise their non-GMO status, but I am seeing that less frequently now. I'm wondering at what point ALL corn will be GMO. I'm terrified of that day.

BTW, DH's family lives near a large, but quaint corn farm in Upstate New York. Who doesn't love white sweet corn in NY, right? Well it turns out the farm sprays Round Up all year to clear the fields, not just on the corn crops, but also the winter rye. Hurley, NY has the highest rates of cancer in the region. Sigh.

Zizzle, I know what you mean about eating a lot of corn products. I do too. Corn chips with guacamole or egg salad, corn tortillas, cold cereal...etc. Does the peanut butter puffs have whey in them? I already buy the gorilla munch, but thought the peanut butter ones had something that I can't eat.???

I tried fresh mango today and seem fine so far. No gurgles or gas :)

I also made potato salad this weekend with red potatoes for a BBQ. I sauted the onions and added eggs, a little chopped dill pickle, mayo and mustard. It was delicious and I was fine after eating some.

For those of you who can eat sweet potatoes, I found a frozen sweet potato fry that is great. it does have a bit of xanthan gum in them, but it didn't seem to bother me. Ore Ida Crinkle Fries. I just put a handful in the toaster oven and they come out crispy on the outside and tender on the inside. 7 gms. of fat from canola oil. Yummy. Great side dish.

I eat a lot of corn flour products, too. I don't know what I'd eat if I became intolerant to them. I'm still lovin' the popped corn chips. How did I live without them?

Zizzie, do you mean you eat fresh corn or corn pasta? I just had corn pasta at a friend's house this weekend with a light tomato sauce. I had no problems with it and I thought it was better than rice pasta. I eat lots of rice so the corn is a welcome change. Leah, I would love to eat potato salad with egg & mayo but I'm afraid the egg and mayo really doesn't like me. :sad:

Prior to my diagnosis I was a low carb eater but I find it too hard to do with a gf/df/sf/ef diet. I never thought rice would become an almost daily part of my diet. I even eat it with almond milk and a little brown sugar or real maple syrup for a sweet treat.

Corn pasta. He read reviews online that Ancient Harvest Quinoa and Corn pasta have the same texture as the real thing (he's Italian) and an agreeable taste, so that was the end of Tinkyada for us. I still make rice pasta for me and the kids if he's not around. And Rice Pasta mac-n-cheese for the kids. They haven't eaten wheat pasta in ages!

I just bought the corn pasta, so I will have to try it soon. My problem is that I haven't tested tomato sauce yet and although the pesto I made was good, I can only have a small amount because it is still made from raw greens ( basil) and garlic, so I don't have much to put on it.

Love corn poppers in Kettle corn flavor! World Market ( Cost Plus) sells it.

Hmmm...World Market is near here. Is it actually popcorn you eat Leah? I suspect popcorn would irritate,although I haven't tried it. I was so good with one nice Norman per day for quite awhile, so I let my guard down with a restaurant meal and the last 2 days I have PAID for my sins. :oops:

I'm lucky in that I can tolerate some raw veggies and nuts but I am reminded every once-in- awhile that LC will rear its ugly head if I get careless.

We've been eating corn pasta for 2 years now and love it. My hubby is OK with gluten but he actually prefers the corn pasta to wheat pasta. Neither of us likes the rice pastas. I also eat a corn on the cob once a week. I *think* white corn is easier to tolerate than the yellow; it seems more tender to me. Then there's our Friday night corn tortilla pizzas that I make. I sure hope I'm OK with corn b/c I still have issues at times! Yes, still on 3 mg Entocort to boot.
