Also Entero showed I reacted to rice too so wondering if anyone has found any breads without these ingredients. I pretty much do without baked goods besides some pancakes I make myself, but a bread now and then would be nice.

I am trying to figure this out. I used a chia seed "slurry" in place of eggs to make the muffins.
I wonder if it could replace the egg WHITES here. There is no yeast in this. I like yeast breads, so I made this one a few times.

I want to see if I can make it without gum, and, again, with chia seeds to replace the egg replacers.

Nancy
the only safe GF/YF/DF/SF bread that i could have was my home made soda bread.

using baking powder/soda as the rising agent, a flour blend that works for you.
You can make egg free if you need to

I have been making a corn bread/naan bread type adaption, i shallow fry them in rice bran oil.
depending on how i do the mix and the temp of the oil, they turn out like crumpets.

I use a flour blend that suits me, bit of home made stock, bicarb, boiling water, half an egg, salt, stir into a batter/pancake type mix, then shallow fry.

Like the soda bread it doesnt stay fresh that long so they only last the day.

Nancy,

I used to make egg-free yeast bread when I could eat rice and quinoa. Since I've given them up, I no longer make it.

Instead, I wrap my meat in tortillas with avocado or homemade salad dressing. I also make muffins for lunch and/or dinner. I don't miss yeast bread except for the convenience of packing a sandwich for a lunch away from home.

Corn is not good for me either so those tortillas are out too. But I never liked corn tortillas anyway :) I think I did find a bread mix from Breads from Anna with no offending ingredients but it is pricey so I think I'll just skip the baked goods altogether.

Gabes, what are the proportions of your soda bread? I am missing something to augment and rotate with my potatoes. I can't afford to lose them.

Tortillas can be made with almost any flour. They may not be as supple as those made with rice and yellow corn flours, but they will hold food. Some have added xantham gum to help hold them together. The tricky part is getting them onto the pan to cook. I use non-stick aluminum foil on the bottom and plastic on the top when I form them (either with a tortilla press or a rolling pin). Remove the plastic and flip the aluminum onto the pan. After about a minute, carefully remove the aluminum and cook another 30-60 seconds and flip to the other side.

I have posted the recipe and instructions in Dee's Kitchen
