Down to Earth Granola

Prep: 10 minutes Bake: 40 minutes

4 cups old-fashioned oats (Bob's Red Mill Certified Gluten-Free)
1-1/2 cups sliced almonds
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup coconut oil (or other)
1/2 cup honey
1 tsp vanilla
3/4 cup raisins
3/4 cup dried cranberries
1/2 cup sunflower seeds (or pumpkin)
1 cup coconut flakes

Preheat oven to 300 degrees. In a bowl mix the oats, almonds, brown sugar, salt, and cinnamon. In a saucepan warm the oil and honey. Whisk or stir in vanilla. Pour liquid over oat mixture. Combine well. Spread granola in a 15x10x1-inch baking pan. Bake 40 minutes, stirring every 10 minutes or so. Dump granola out on parchment paper to cool completely. Break into pieces and store in an airtight container.
We like to measure 3 oz. into snack baggies. They are good to grab for on-the-go eating, and also keep us from filling our bowls too full if we are eating with milk for breakfast.

This is a very forgiving recipe. If you can't do an ingredient, substitute another one (maple syrup for honey, another nut for almonds, dried mango for coconut) or leave it out altogether.

This sound really good, Marliss. I think the grands will love it. I just picked up some maple sugar (new at Trader Joes). It says you need half as much as regular sugar so I'm thinking about trying that. DD has tree nut issues so I may try pistachios or cashews, both of which she can tolerate.

Marliss, I notice the proportions are about the same as the ones I posted. It's so easy to make, and so delicious to eat!
