MRT Test
This will seem like a silly question since I've been around here for a little while. But, does Enterolab offer the MRT tests? Or where are you getting them done? And which test would you recommend more?

Many members here start with Enterolab. It is a more limited test than MRT but many find it helpful. It is a stool test and there is no need for a doctor's order. Then there are some of us who seem to have multiple food sensitivities and in this case MRT can be helpful. There are many discussions about both on the forum. Where are you with diet restrictions and symptoms?

So far I am just DF and GF. I have decided to go soy free as well. I avoid most fruits and veggies unless well cooked. I don't do well with ground beef unless it's grass fed---would that be a fat issue?
My symptoms are strange. I seem to be stuck in some kind of cycle. A couple good days and a couple bad days. Yesterday, what I think is reflux symptoms started up again. I don't get the actual heartburn, but I get tightness/pressure in my neck and upper chest. This morning I can feel mucus stuck in my throat and I have horrible shoulder pain in my left shoulder---which I am convinced is gas. I just took some pepto hoping to get some relief! Last night I could feel some pain/pressure up my neck and into my ear. I've read that silent reflux can behave this way. And I did have some food come back up a little---without any burning whatsoever though. I feel like if I could make myself burp I might get some relief. This is terrible! And of course, still having occasional D. Yesterday just one round though, fortunately. Truthfully, though, I would rather deal with the D than this gas pain. I can barely function....

FWIW, the upper chest, shoulder pain and neck symptoms that you described match the symptoms that I used to experience when I ate beef (before I recovered). Beef never gave me D, just the upper body symptoms, a moderate amount of gas and bloating, and a light headache. Pork and chicken never caused any problems for me. After my gut healed, I was able to eat beef again without any noticeable symptoms.
