i think there is a thread where you asked how long before i could eat aged cheese again..(i cant find it now.... doh!)

i started having small amounts of aged cheese about 7 months after things were good (14mths post Dx). the major food triggers were elminated, i had been focussing on a low inflammation, leaky gut healing eating plan for that whole time.

i would only have it about once a month or so, now i am 2.5 years post Dx and i am having small amounts weekly. mindful i still follow my low inflammation bland type eating plan that is GF/SF/YF/LF low histamine, so the aged cheese is one of a few foods that i class as treats.
I have been lactose free for at least 9 years, so have always known that i could handle small amounts of the aged cheese.

Thanks so much. I have been in good shape with only a couple of short flares for 5-6 months. The thought of a small piece of nice sharp hard cheese is maybe worth the risk at this point.

That will likely be my first intentional food risk but it will be a risk since I only deleted dairy from my diet in January and I did react to ghee a couple of months ago. 9 years is a long time to be lactose free. Most impressive.

Hi Gabes,

I too look at that small piece of aged cheese - especially extra shart - as a treat. Better than a piece of cake.
