dairy challenge
I have been staying away from dairy and it's been about a year and a half since (to my knowledge) I had any. Last night I had 3 gluten free mozzarella sticks and a bite of ice cream. Not one stomach gurgle and no bloating. And no D. It's not like I am going to start eating it again but, it's good to know that I can handle it if it happens to be in any food I am unaware of.

That's great news Jenny, nothing like being able to add food back. Now that you mention dairy, the calamari that was served at the table the other night was sautéed and I think they used butter, so that would have been another unintentional challenge. They did use clarified butter though which would have been safer as the casein is mostly removed.

Hopefully you will be able to tolerate dairy. When my mast cells were acting up aged cheeses were a problem but now I tolerate it just fine. I always thought it was harder giving up dairy than gluten.

I would LOVE to add dairy back into my diet. But I have to ask... for someone like me, who was totally asymptomatic until I did an unintentional challenge last July, would it mean that I might be accruing damage even if I had no symptoms when I added dairy back?

In my case my Enterolab tests showed more antibodies to dairy than to anything else, even gluten, in spite of my having been off all dairy for months. I don't think I will ever be able to add dairy back in, any more than I can gluten, because of the damage I would likely accrue. Bummer. :(
But I am happy for you, Jenny! I think dairy would make life a lot easier. :)

I, too, worry that I might be accruing more damage, even if I don't react. I do have a little butter to saute my veggies, and it doesn't seem to bother me, but based on my Enterolab results (a 9 even though I had been dairy free for 2 months), I don't think I'll ever start eating cheese and ice cream again on a regular basis!

Good news about the dairy. I have been pretty much dairy free for a year now. I did have the N.A.E.T. treatment to clear me of that intolerance, but still stayed away from it. Just recently I've been adding a little butter to a baked potato if I'm at a restaurant, reg. milk to mashed potatoes. This past week I had a couple of spoons of ice cream. When I ate at a restaurant the other night I know there was butter in the sauce on the chicken. No issues so far. Like you, I will take it slow just to test and hope it isn't causing damage.
