Paleo Muffins ???

Deb - I use pure, unsweetened coconut flakes, but I always stay clear of sugar. I made them a couple of days ago, and left them in the oven too long, which dried them out a bit - so be careful to take them out as soon as they are done.

I also made the muffins Sunday using sweetened coconut. I had one as they came out of the oven and put the rest in the freezer immediately so I wouldn't eat the whole batch. They were delicious. I also used only 2 cups of almond meal/flour.
The recipe called for 3 eggs which I used even though Enterolab said I am sensitive to eggs. In the future I believe I can use Dee's egg substitute in this recipe and it wouldn't make a difference. I have not had any other eggs since getting my test results in May.

These were really good! I used unsweetened coconut but that can be hard to find. If you use unsweetened coconut go w/ the 2T honey. Next time I'll melt the coconut oil in my micro as it was firmed up due to my air conditioning. I used the bagged carrot shreds. Next time I think I'll grate a large carrot in my food processor to get a finer shred. Brandy

Here is a list of Dee's substitutions in case you haven't seen them
Yeast substitutes:
1 tablespoon baking soda + 1/2 teaspoon ascorbic acid (vitamin C)
1 tablespoon baking soda + 1 teaspoon lemon juice
Egg Substitutes:
2 tablespoons arrowroot powder = 1 egg
2 tablespoons potato starch = 1 egg
1 banana = 1 egg in cakes, muffins, quick breads
Butter Substitutes:
Oil instead of butter for sauteing
Oil or coconut butter or applesauce for baked goods
Spectrum Naturals Spread for things like pie crusts
Substitute for half & half = coconut milk
Substitute for powdered milk = Vance's Dari-Free (potato based) or rice milk powder
Substitute for evaporated milk = thinned coconut milk or rice milk
Substitute for sweetened condensed milk = cream of coconut or 3 cups rice, almond, or hempseed milk + 1/2 cup sugar + vanilla extract
Substitute for buttermilk = 2-3 teaspoons of lemon juice, apple cider vinegar, or cream of tartar in your nut, rice, hempseed miks
Substitute for sour cream = 1 cup mayo + 1 tablespoon sugar
Corn free baking powder = 2 tsp cream of tartar+ 1 tsp baking soda+ 2 tsp arrowroot

I made these muffins today, and they are truly delicious! I did have to make a few substitutions, due to my not having everything I needed.
I used only 1/2 cup shredded coconut because mine was sweetened coconut. I used 2 oz raisins and 2 oz dried cranberries, because I didn't have enough raisins. I used 1/4 cup olive oil and 1/4 cup coconut oil. They were so good, I ate 2 right from the oven!
We are leaving July 5th for our 50th anniversary trip to London, then Paris. I made these to take along (it's hard to know what to bring). These muffins are perfect. (It will ease my fear of a very long flight).

I just made these too. I have the Paleo Comfort Food cookbook, but had not tried the muffins until you all started talking about them. I used unsweetened coconut, which I find readily available at Kroger, and just a little bit of honey.
They are good. I plan to take them along for snacks on our trip to Kansas on Friday.

This is the MOST forgiving recipe. I made a new batch with all sorts of ingredients. Whatever I had around.
I only had 1/2 a cup of chestnut flour, so I added 1/2 a cup of coconut flour, 1/2 a cup of pecan meal (NOT flour and pretty moist) and 1/2 a cup of walnut mean (same as the pecan). I also added 1/2 a cup of chopped prunes.
The result? Luscious. The were eaten faster than the first batch.
I am using an Israeli date syrup as a sweetener. It's terrific. You can make it if you can't find it.

I make a braised beef dish with it sometimes.
I can improvise with this type of baking easily. Next I want to try some chocolate. Is chocolate paleo?

Huge thanks for posting the paleo muffin recipe. They are saving me and I'm eating 1-2 a day. I'm doing better eating them than rice. They also travel really well. I've made 2 batches to date. I think I'm going to get mini muffin tins so I can make mini paleo muffin bites and have smaller snack sizes. Brandy

Mini muffins are a great idea!! I'm glad I could contribute something useful to the panel because I have received so much from it.
I'm going to try the cauliflower grits recipe tonight. I hate cauliflower but according to the cook book authors, it tastes great and is a good accompaniment for protein. I'll believe it when I taste it. Pre paleo days I'd just throw a lot of cheese on top to disguise the taste. No disguising now.

Sheila, I brown onion and garlic in coconut oil and then throw in a half of a head of grated cauliflower and stir fry it. Don't cook it until it is mushy. Add a little salt and pepper and I love it. Normally I would just steam my cauliflower and eat it plain, but this is really tasty. Try it.
