I made your Butternut Squash Soup this afternoon and it turned out very tasty. With outside temperatures at 110-115 degrees we don't eat hot soup now. However, I think it will be great cold. Will have some cold soup tomorrow.

It's great to hear that you are feeling better Marion! I started an elimination diet yesterday and it's definitely proving to be a challenge! I was actually just thinking of making some butternut squash soup because I bought one yesterday.
Unexpectedly, giving up chicken and eggs is proving to be the toughest part! I couldn't find any vegetable broth at the store so I made my own, I also made some vegan mayo because the only thing I could think of to take to work today was turkey salad inside of an avocado. I might just have to start coming home to eat every day, but I'm paid hourly so I usually work through lunch.
If you are still doing SCD, I actually made a coconut milk yogurt yesterday and it came out pretty good! It still needs some tweaking but it's the best I've found yet.

Eliminating eggs is difficult at first. I'm impressed that you've made your own broth and mayo. You are really becoming the creative cook. Please post your coconut yogurt recipe when you've perfected it. Many people here would love to have it.

You just amaze me, that at age 21 you are so proficient in the kitchen! I hope that your elimination diet goes well! I want you to feel good and enjoy being so young!
Last night I made a huge batch of Paleo Chili (no beans), so that I would have leftovers to carry to work. In spite of all of the spices, I have been fine with it. I just love finding new recipes that don't upset me.
