I thought everyone on the paleo diet might appreciate this dip! It tastes like hummus, but I personally like the texture even better. I was just messing around so my measurements aren't exact but they were something like this:
2 Zucchini
1 Head of Garlic
1/4 Cup of Tahini
1-2 Tablespoons Lemon Juice
Slice the zucchini and coat with olive oil, roast in oven for 20 minutes at 450.
Slice garlic in half, coat with olive oil, and wrap in foil, put it in the oven with the zucchini but roast an additional 10 minutes.
Let zucchinni and garlic cool slightly, then put all of the ingredients in a food processor or blender.
That's all! I started with half a head of garlic and kept adding cloves until it was to my liking.

That's a great recipe as long as you don't call it hummus
The word hummus means garbanzo bean, therefore ONLY garbanzo beans in any form can be called hummus, but it's become the middle eastern reference for garbanzo bean paste.
You'd never call Tahini hummus. Tahini is tahini and hummus is hummus.
Yours is a very nice sounding garlicy zucchini with Tahini dip, which I am going to try tomorrow.
