Paleo Muffins ???

Today was a cooking day. I made banana/apple paleo muffins with chopped pistachios and they turned out well. I don't think you can screw up these muffins unless you go off the reservation entirely.
I also tried meat muffins with a bit of a difference. The recipe is from "Well Fed" by Melissa Joulwan. It is a standard meat muffin recipe with the addition of chopped spinach. I used some left over meat/spinach mixture to top a couple of portobello mushrooms and it tasted pretty good. I want to see how they taste after being refrigerated and then reheated. These will be perfect to take on a long car trip that is coming up.
With the addition of some GF bread to my diet, I feel better and my weight hasn't gone down for the past couple of days. In an attempt to reverse the weight loss, I stuffed my face a few days ago and paid for that with D the next morning. No more over-eating. I felt lousy, too. Bloated and burpy from too much food. Can you overdose on meat???

Gloria - I am a frustrated Jewish grandmother, and when I cook and/or bake I can't help sharing. It's so ingrained in my blood I could no more keep food I cook to myself than I can fly. Years ago I would cook and bake MOUNTAINS on Fridays, and, know it would be gone by Friday night if I left it out, so i used to put some in the freezer to have some for the rest of the weekend.
Right now I am making mini muffins for people to try. That way I can share the flavors, and be left with most of them.

Chris, meat muffins have been a staple in the diets of many potty people over the years. When I first joined, our now absent friend Sarah talked about the many varieties of meat muffins she made. There are probably a number of recipes in the archives.
The ones I made are from a paleo cook book I bought (Well Fed by Joulwan) and the recipe is basically a meatloaf recipe with the addition of cooked spinach and baked in a muffin tin. Be sure the spinach is dry. Put it in a collander and press a slightly smaller bowl down on the spinach to make it release it's liquid. Cook onions, garlic and add 1 1/2 lbs chopped meat. Break it up as it browns. Add whatever seasonings you like. Let it cool for 15 min and then add 3 beaten eggs and the spinach (3 packages). Mix it together well and pack it into muffin papers in a regular muffin tin. Bake for about 40 min. The spinach makes the "muffin" moist and, for me, more palatable. I plan on taking some on a long road trip.
I have to confess that I don't share my muffins. I guess I'm a muffin hoarder. The more I have in the freezer, the happier I am. Hmmm, do I feel like a zucchini muffin, perhaps an apple/banana muffin or pumpkin muffin? The paleo (or pseudo-paleo) diet is so very boring, muffins are real treats.

Are your zucchini, apple/banana. and pumpkin muffins made from our beloved Morning Glory Muffins? And if so, do you just eliminate the 2 c of carrots and add 2 c zucchini, or 2 c of pumpkin, etc? If that is all you do, I will definitely experiment with all that.
My stash of muffins in the freezer (I don't share, either) is just about gone. I need to make more in a day or two. These muffins have become my breakfast. And, I love the fact that you can use almond flour which has very little carbs, and coconut oil.
I always watch this muffin post. Wonderful ideas from all.

Garina, I had to substitute carrots which are red on my MRT. Just substitute 2 C of either zucchini or pumpkin for the 2 C of carrots. The apple/banana recipe is one that I found here that is slightly different. Go back a few pages and I think you will find that one plus many other creative recipes. It is almost impossible to mess these up.

That is too bad about the carrots being red. Ginger was on my red MRT, and I miss using it.
Thanks very much for the ideas for these muffins. I will go back a few pages and find the other recipe, and, I just ordered the Paleo book from Amazon. Sounds like a recipe book I would use frequently.

Hi Chris, There has been discussion in the past about those of us who are sensitive to eggs according to Entero Lab testing and our ability to eat them when they are incorporated into something else, like bread. I use eggs in baking frequently and don't have any problems. I haven't gotten up the courage to try them on their own yet.
Tex has a very interesting opinion regarding eggs and it's really very sensible. I think if you go back further along this thread you may find it. Either that or search the archives. Of course, we are all different and have to be careful when we add in food that may not be good for us.
The meat muffins taste pretty good cold and that's a real plus for travelers.

Okay, I made them this morning. This is my first foray into Paleo baking. I didn't realize that the "batter" would be so stiff that I could just press it into the muffin tins ( I even added a little almond milk). I was pleasantly surprised how moist these are! They are also very filling. I think next time I will use sweetened coconut because I would like them slightly sweeter. They are all in my freezer :)
