Wonderful recipes
I came across the Annalise Robert's website a while back and so glad I did. I purchased the flour she recommends and the Gluten Free Baking Classics cookbook, and can't believe how good my baked goods are. Today I made an orange juice bread and it was unbelievable. My DH and I could have eaten the whole loaf this afternoon. I have made chocolate chip cookies and various cakes and each one has been amazing. No more dense, heavy muffins, cupcakes, etc. I've served these items to friends who are not GF and they loved them. Also, if you have any questions, just email her and she will get right back to you with answers.
I just thought I would share this as I know some are struggling with finding tasty things to eat that are much like the old gluten recipes.
Just ask Joe about the chocolate chip cookies. I sent him home with a bag and he ate all of them before he got home and that is only a one hour ride.

I appreciate this info as I am fairly "NEW" to trying GF and have been struggling finding good tasting foods and breads. What really bothers me about it is the fact that it certainly isn't cheap to buy and then throw away. I tried my 1st GF prepared pizza today and the toppings were really tasty but the crust about made me ill. The taste was like mushy cardboard. I've been through the recipes on this site a hundred times and found some others on a couple other sites. Am always looking for new tasty suggestions.

I know what you mean. I can't tell you how many baked goods and bread that I have thrown out and like you said the ingredients aren't cheap. I have a cupboard full of all different flours that I don't even use anymore. So, with her recipes I just buy the one flour mix which is ground so fine it is like gluten flour. Except for the bread, which I have pretty much given up on, everything I have made in this book has been unbelieveably good. So much like gluten items. I have made the choc. chip cookies, yellow cake, lemon cake, orange juice bread, pumpkin muffins, and coffee cake. My husband and friends eat them right along with me. I get the Authentic Foods flours at my local health food store, but that is the only place I have found it. If need be I would send for it on line and not think twice. I just freeze individual pieces and put them in the freezer. It probaby sounds like I use pastries all the time, but really, I don't. They last a good long time in the freezer.

Nancy huge thanks for the tip! Between work and cooking protein and veggies I don't have much time for experimenting with flours. I'm going to pick up the book you recommend and the flour mix. I'm tired of throwing stuff (and appliances away) from failed recipes. I tried coconut flour waffles and had to throw out the waffle maker. It was a dismal failure.

I have the author's bread machine cookbook and it's great. When I had to change some ingredients because of the MRT results, she was very helpful. She answered my e-mail right away with some good suggestions.
Thanks for sharing. I will probably get the baking book. I have a couple of GF cookbooks that are pretty worthless.

Hey Cathy! Have you tried the Udi's products? I've been gluten free for 3 years and I really like their whole grain bread, their millet-chia bread, their muffins, and their pizza crust. Once I found them I stopped trying other brands.cjbndtsn wrote:Nancy,

I have found Udi's white bread that I have found makes the BEST grilled cheese sandwiches I ever had. Unbelievable!!!! Udi's bread is the only kind I have tried but I will try their pizza crust next time I look. Not much into sweets so I haven't tried muffins and such yet. Still trying different generic staple type foods that I enjoy back in the good ole days before MC. I do love looking at all these different recipes and choices and have found some REALLY yummy stuff from Dee's recipes on this site. Turkey tenderloins and carmalized onions was to die for!!! By far the best so far!!!

I've always had pretty good luck substituting sorghum flour for rice flour, though you need just a touch more sorghum flour when you are baking because it weighs less than the rice flour. Here's a good article about substituting gluten free flours, and I'm attaching a chart too, it's been very helpful to me since I started avoiding rice.Lesley wrote:Sheila,
