gluten intolerance

Post by gluten »

Hi , I was looking for a support site for MC for the last ten years after a colonoscopy and an endoscopy to look for celiac disease. It was easier to have them done at the same time. The endo test was negative for celiac disease but at the time there was no method to determine any partial damage to the villi. Dr Fasano from the University of Maryland at a meeting presented the five levels of celiac disease. One, there is no damage and Six, the worst case. But what about the people in between No. Two - Five. They are not classified as celiac but gluten intolerance. I have been working with a celiac support groups since I had a stool test and it confirmed the antibodies for celiac disease. The colonoscopy, showed MC on three levels. This is a great site with many knowledgable people. I have been following a g-f diet for the past nine years and find it very easy to follow. However, the ingredients that are in the mixes for breads and desserts have no nutritional value. In many, sugar is the first ingredient and then potato, tapioca starch and white rice flour. The most significant change in my battle against MC is when I looked the inflammation index online and was surprised to see the high inflammatory number for some of the foods I was eating. So now, I try to balance the number to as close to zero as possible by adding food or supplements that have an anti-inflammatory index. A good site online is " Nutrition Data ". it gives the inflammatory number plus other useful information.

:welcome:

Thanks for that information. I think I just saw that today on Facebook posted by Wheat Belly.

I wish gluten was my only intolerance.
