Back again with yet another OT question

Hi...I love to make a frittata when I need to eat on the run....I use eggs, cheddar chesse, chopped-up bacon or ham...add a little parmesan cheese for flavor...salt, pepper and sometimes mushrooms or other veggies. I mix it all together and bake in a greased pan..I use my Corningware tart pan and..... maybe put some extra cheese on top and broil....yum...easy and I eat it cold as well as hot.

Well I'd love to stay and chat but I am off to the kitchen to rustle up some "Egg Frittata ala JJ"! Sounds wonderful, and simple enough that even "I" can do it. More importantly, it's ingredients I have right here and now without having to go to the store first!

Diagnosed November 2004, Used Asacol and Lialda, sometimes worked, sometimes made it worse. Entocort always works but hate it. Remission only lasts 3-6 months and then back on Entocort. Enterolab test July 2017, now gluten free. Time will tell!

Hi Sue,
Don't have any good suggestions for breakfast recipies, but I like a yogurt smoothie for breakfast and a piece of fruit. I don't even eat it until about 9:30 or so because it takes until then to finish my coffee that I get on the way to work (I arrive at work at about 8:00).
Are you gf? If not, corn bread/muffins with brown and serve sausage cut up into it makes a nice little breakfast treat.

No, I don't have a gluten intolerance, but I may as well have since I have to cut way back on carbs due to hypoglycemia. I try to eat very little, if any, bready stuff. But the yogurt smoothie sounds good - thanks for the reminder that breakfast doesn't always have to be something warm!

Hi Sue...hope it works well for you! I bake it at 350 until it's set in the middle...usually about 25-30 mins, but it depends on how many eggs you use. I usually make one with 5 or 6 eggs and eat it for several days. It freezes well too! I am trying to be low carb...I feel so much better when I eat mostly protein....this morning I made french toast using low carb bread and used sugar free syrup...yum....good luck...Jill

Jill's frittata is a great idea. I make one using roasted vegs and it always goes over pretty well with the mob. Made it for my card ladies last time. I roast pumpkin,potatoes,capsicum, sweet potato, carrots with some onion and garlic and layer this in the dish, beat up 8 eggs with a little mustard, parsley, basil or anything else that takes my fancy and bake until set. You could throw in a little chopped ham or chicken if you like. They are pretty flexible things to make.

Let's hear it for the incredible, edible egg! There are SO MANY things you can do with eggs once you let yourself be creative! The dietary health specialists better not go back to telling us we have to limit eggs, or we'll be up sh*t's creek, or at least I will!
