Europe with 4 little kids (Crazy I know)...What to eat?

Tex, The weird thing is that this started up after I accidentally had the little bit of milk. I had been having a couple of cashews here and there with no problem. Then my throat swelled up a couple of days after the milk and it took a couple of weeks to go away. Now if I pop a couple of cashews it comes back. I agree with you that it is anaphylactic and I will not eat any more nuts, it is just odd, I had an IgE done a couple of month ago and it was almost negative!
That's strange that it persists for a couple of weeks. An anaphylactic reaction usually fades away pretty quickly. Apparently, something else is going on, also.
IMO, reactions to major allergens (such as gluten and casein) make us temporarily susceptible to developing other sensitivities (because of the drastically-increased intestinal permeability while the reaction is underway). I have a hunch that in some cases at least, sensitivities developed by that mechanism will persist until the intestines heal (and gut permeability returns to normal, consistently), and then they may fade away. That's just my theory, so take it with a huge grain of salt.

This Gite (bed and breakfast) is really off of the grid and was kind of tough for me to find info on online. My sister and I stayed here about 8 years ago and it looks like the same lady is still running it. Mme Blot Chantal. It is extremely little kid friendly. Ignore the statement about "antiques." I would call the decor more "rustic country decor." This is in a very rural French area. 30 minute drive to Euro Disneyland and 1 hour drive to Paris. Also Reims seems to be close. Bussiares may not show up on a map. If you want to look online look up Chateau Thierry. Chateau Thierry is about a 10-15 minute drive away. Chateau Thierry is population 14,000.
The Gite (bed and breakfast) has a great walled in back yard/garden area great for play. I had great fun tossing a ball with their little dog in the back yard and I was 42. My sister and I reserved for dinner and hands down it was the best meal either my sister or I had ever eaten in our combined 75 years. Don't stay here unless you stay for dinner. I think we had like 7 courses or something. It is family style and you sit around one large table kind of like at Grandma's house. I remember the meal was meat based with a lot of vegetable dishes. My thought is if you decide to look into it Mme Blot Chantal could probably make you GF DF and SF beef and vegetables. If you decide to go definitely specify that you want her regular cooking for your husband and for the kids. You don't pick from a menu. She just cooks what she cooks. YOUR HUSBAND WOULD LOVE, LOVE LOVE THE FOOD!
The place is kind of isolated. It is in a crossroads of maybe 12 houses/farms and a little church. Maybe one car drives thru a day so a very safe place to have the kids run around. I liked seeing the pigs, cows and I think sheep in the area up close. Be aware it is probably a 10-15 drive to Chateau Thierry if you need anything. There is no sights in the immediate area--this would be a place to arrive late afternoon, enjoy the garden and walk around the crossroads, have a terrific dinner, breakfast is pretty good too, and American kid friendly as she brings out the American cereal and move on from there. She doesn't do lunch. If you stay two nights you need to have daytime activities planned.
It looks like you still have to pay cash and no credit cards and you have to reserve dinners in advance, i.e. when you make reservations. She won't supply dinner on the spur of the moment I guess because she gets the ingredients in advance.
MMe Blot Chantal does not speak English and neither my sister or myself speak French. We came up from Germany (my sister was a marine stationed in Germany.) for the Memorial Day celebration at the American Cemetary in Belleau Woods. (I don't recommend a visit there.) We were able to get by however despite the language differences. I believe she understands some English but does not feel comfortable speaking it.
She seems to get a lot of business by word of mouth at the Army base in Stuttgart. (She's definitely not advertising on the web.) The army families with little kids will spend the night and have dinner there when they are passing thru to see sights. I got the feel she has "regulars" that come back. The men really like the food and the kids get to run around.
One of my sisters Sargeants and his wife took their 3 year old to Euro Disney. (not that I'm recommending it) It seemed to be very manageable for a 3 year old and I believe it is a much smaller operation than Orlando Disney World.
You can drive into Paris--1 hour--or take a train from Chateau Thierry into Paris.
If you decide to do an email inquiry let me know--Mme Blot Chantal would definitely remember us as my sister forgot a critical part of her Marine uniform and Mme Blot Chantal stitched up something on her sewing machine that worked out. I can give you a couple of things to mention in an email.

We are starting to get close to travel time, and we haven't figured out Paris lodging yet, so I will discuss with the DH. The place sounds great. I think he wants to stay in Paris, but it might be a pleasant change for one night!

I still need to figure out what I am going to do with the chef's card thing. Feeling like I just may not eat out at all!
I did get a letter from my doctor for TSA and customs, so I am hopeful that will help. TSA also has a program where you can call in and get support coordinated at your departure airport, so I am going to contact them and see what they can do for me!
We are only 4 weeks out from departure. If anyone thinks of anymore tips, I am all ears!
