Iam new to the message board, not so new to mc. I am trying to go gluten free, does anyone have suggestions for what to eat? I also have acid reflux, arthritis and fibromyalgia, so any help would be greatly appreciated. Julie

Hi Julie,
It depends o what you can tolerate. If you are only GF like I am...........you would be surprised at the foods you can have. With this fresh tomato season going on I eat salads and nachos. THeir are GF dressings that I found are awesome and shoot Tostitos, On the Border, Doritos have all got GF chips where I sprinkle a little shredded cheese on them, cut up a tomato, and a pepper and heat for just enough for the cheese to melt. If I have leftover taco meat.....I add that in too. Otherwise, I eat a lot of chicken bbq'd with some great GF bbq sauce or many other ways, we treat ourselves to have a nice filet steak once a week, I've found GF pasta that I really enjoy and I make spaghetti with our own mixed sauce that we make. 2 days ago we fixed Mostaccholi with GF penne noodles. I can't taste any difference. I've been real pleased. Usually at least once a day some kind of potato.....baked, mashed, fried(in extra virgin olive oil) or hash browns. I was like you at first and thought OMG what will I eat but it really is an easy transition if (and thats a BIG if) GF is all you are having to do. I think I'm one of the lucky ones on this forum that are only GF. Most others have had to give up eggs, dairy, soy....
One last thing here.................at the top of the homepage click on Dee's recipes............I found tons on here to fix and the Turkey and carmelized onions is to die for and then I fixed it with chicken............even better!!!! That was my favorite so far but I've fixed many of them and can't tell you of any one that I didn't care for.

Thank you for the ideas, I am also unfortunately lactose intolerant and I am supposed to be on an esphogial diet, like no caffine, nothing with acid like tomatoes and did you know if you go on Campbell' s website it tells of all the spaghetti sauces, like certain types of Ragu are gluten free, again thank you Julie

Hi Julie,
Yes I knew there were some GF spaghetti sauces but we have always made our own(even before MC came to visit me) with hamburger, tomato sauce, petite diced tomatoes and tomato juice......simple and delicious and cheaper. But not sure if you can digest the canned tomatoes or not. With your lactose issues........you should definately check out Dee's recipes........they spell out all the different ingredients and specify milk or dairy products. It's pretty easy............you can do this. Shoot I have always been the basic meat and potato girl so I didn't loose too much. THe bread was the biggy but I love Udi's products. THey are expensive but really good. Udi's white bread makes the most delicious garlic bread....just grill in skillet for short time and its perfect. Udi's also makes a yummy 3 cheese GF pizza but again the cheese might be an issue for you. Keep asking these folks though they have a lot better ideas and suggestions than I do............lol. Shoot this is where I learned most of my GF stuff. Good Luck Julie

Hi Julie,

Welcome, Mom has been GF for 25 years as she is celiac. She has a large tupperware w/ her GF bread, GF crackers, GF cereal, and GF cookies in it. My Dad eats regular wheat stuff. When she makes lasagne for the family she uses GF noodles and everyone eats that. When she cooks pasta for my Dad and herself she makes a wheat batch for my Dad (he prefers wheat pasta) and a rice pasta batch for herself. That is how Mom has been handling going GF.

If you are really really sick stick with things without an ingredient list or with less than 3 ingredients for awhile.

HI Julie,

I forgot to mention you possibly may see a reduction in your arthritis pain going GF. It took about 10 weeks of being GF but my 15 years of joint pain in my fingers, hands, wrists, arms is gone. Brandy

Hey there and welcome!

We are in the same boat....I have to be be on a low acidic diet as well and also have been GF since July 1 and Dairy-free for about a month. Gluten-free is easy, but be careful of all the processed junky Gluten-free foods out there that can exacerbate your gut symptoms. I like the GF pastas, especially the Quinoa/corn mixtures, but still don't know if I react to corn or not. I can't do tomato sauce at all but do fine with just tomatoes. I usually mix my GF pasta with my meat and some avocado or even some vegan butter. Not as good but getting used to eating bland. I found that when I eat a lot of meat (which I've been forced to do lately cause of MC), then I get more heartburn. Have you tried Betaine HCL? Look at this website...scdlifestyle.com. They have good information about it as well. Good luck!

Hi Julie. Welcome! You didn't mention whether you are still suffering from symptoms of your MC. Many of us have multiple intolerances and have learned to cook around them. If you ARE still having symptoms, then you might be intolerant to more than just gluten and lactose. Gluten and dairy are a good place to start though. I too have to stay away from tomatoes, so if I make rice pasta, I make my own pesto ( no parmesan) and it's delicious. After two months, I realized I was also reacting to soy, so I am now GF, SF, DF..... plus the acid stuff. Many fruits give me a hard time if I eat more then just a bit. Pay close attention to how you feel after each thing you eat.

Anyway, if you are eating potatoes,rice, corn, and sweet potatoes- then you have many many choices. Be wary of the GF baked products on the market because sometimes the other ingredients can give us problems . I am just starting to eat a liitle Udi's bread toasted ( after 8 months).Like Terri said ; the less processed the better.

Read some of the older post on this forum. They are full of great info.

Hi Julie,

Welcome to the group. You've already received a lot of good advice, so about all I can add is that I agree with it.

The symptoms/issues you named are commonly associated with this disease, and as Brandy mentioned, as you begin to control your MC symptoms, you will probably discover that your other issues are much better, also.

My whole family is GF/DF

Breakfast ideas...Banana and peanut butter smoothie, or other smoothie with fruit and a nut butter for protein, gf/df pancakes (I have a great recipe that even omits eggs if you want it), crispy rice cereal (I like nature's path the best) with rice milk or coconut milk (trader joe's unsweentened is our favorite)or almond milk. Nature's path waffles have few ingredients. Eggs, Bacon, Sausage.

Lunch...grilled chicken breast with rice or quinoa or gf noodles, salmon with salad, taquitos are often just a corn shell with meat in it. Check for cheese though. I like a saute of carrots, zucchini, and celery. Sometimes I make a hamburger (buffalo) and guacamole in a butter leaf lettuce wrap.

Snacks...My kids love the GF pretzels from Snyders. We do tortilla chips, potato chips (lays and ruffles are gf). Lots of nuts and trail mixes. I make my own "granola" nut bars with nuts and dried fruit.

Dinner...Our dinners didn't change that much. Just replaced the breads with GF bread and eliminated cheese, use coconut milk/ almond milk/rice milk in place.

I have figured out substitutions for almost everything, so if you are thinking of something specific please ask.

It seems soooo overwhelming at first, but I really don't miss the gluten anymore. Not after how much better I feel. Brandy is right, all of my "lupus symptoms" have gone away since I went GF.
