How To Prevent Histamine

Hi everyone! I'm wondering if anyone here has a good solution to the 'left overs' and fresh meat histamine problem. I usually cook and eat what I'm going to prepare and then cut up into individual serving size and freeze. However I'm wondering what happens whilst that frozen meat is thawing out in the fridge...I know there isn't a perfect solution but what do the rest of you do?

I try to freeze leftovers as well but does it really make a difference?

I've wondered the same thing. I also wonder about what happens while it sits in the grocery store waiting to be purchased. Sometimes I think so much it makes my head hurt. :grin: I do miss the days of opening the cupboard and just eating whatever I wanted. Better to look forward instead of back, I keep telling myself.

I defrost the cooked, frozen meat in the microwave, then heat it to the right temperature. I don't ever let it defrost in the refrigerator.

DebE...I know what you mean. Wow, life used to be so simple!

Gloria...you cook everything when you get it home and freeze the left overs? That way nothing sits in the fridge defrosting it goes right into the microwave eh? OK...that will take a bit more planning than what I've been doing but it's doable.

Thanks for your replies. Being able to come here and talk about this kind of thing is really helpful.

I follow pretty much the same routine as Gloria. I try to keep meat frozen, (whether raw or cooked), and then defrost it in the microwave.

Not quite. I freeze everything when I get it home. When I want to cook it, I defrost it as much as possible in the microwave first. Sometimes I let it defrost in the refrigerator, but I cook it once it's defrosted.

I almost always cook roasts: turkey, lamb and pork. Once they're cooked, I slice them and put them in a freezer bag. I take out a slice to defrost and heat when I want to eat it. I also freeze my turkey sausage after I've made the patties and cooked them. When I want one for breakfast or a snack, I take it out and heat it in the microwave.

OK, Thanks Gloria! I haven't done many roasts yet but that sounds like a good idea. I'm Paleo now so I have all kinds of gluten free stuff around that I can't bring myself to throw out...wish I lived closer to someone so I could pass it on. I'm feeling good. Do you visit any Paleo forums?
