Hi Lesley,

I'll try them---didn't know they had high water content...I tried kale and yellow squash today. It was green alright :-) felt I was eating grass :lol:

I think I am gonna wait until I can cook kale to try them again. I really do love them.

I am feeling better today, no nausea but I still feel heavy like I just ate a roasted pig. Not pleasant feeling. and I still can't eat much. So I am still cooped up at home.

I hope you start feeling better soon.

looked in 2 different stores today for the Jicama (with an H) and had no luck. I'm gona keep looking and try them. I actually think I might have tried these when we went to Mexico a couple years ago but I would've never made that connection until you said H not J. Then I pronounced it completely different.....lol. I do believe we ate them raw then but I want to try the shredded fake hash brown thing.

It's usually in the "exotic" section in produce. I have seen it everywhere here.

I can tolerate both jimaca and kolrabi but only cooked. They are really interesting additions to stews and soups. Also they do convert to a kind of hash brown potato if done with onions.

Cathy, jicama can be made like hashbrowns especially popular for low carb or paleo.

Deb and Maggie........Excellent........I bought some for my company over the weekend and we had some raw. It was ok (they thoroughly enjoyed it) but I just couldn't help thinking I should try it as hash browns. I'm going to now!!!! Thanks for the recipe!!!!
