I just made some meat muffins that turned out well. I know we've had discussions about these before but they're sure handy to have on hand.
I lightly browned some (1/2#) grass-fed (pastured) pork sausage and added about 1/2 tbsp. Penzey's breakfast sausage seasoning (sausage, ham, bacon or seasoned beef could substitute). Move the meat to the side and saute 1 c (or more) chopped spinach (mine was frozen- other veggies would work, as well) and 3 chopped green onions. Remove from heat. Add approx. 1/4 c coconut milk (canned) and 3 beaten eggs.
Season with salt and pepper (next time I'd add a bit of nutmeg). Fill muffin cups (I got 6) and bake at 350 for 15-20 minutes.
They're good!

Huh! I'm not sure I understand what you mean.Lesley wrote:Tex, I seem to be left justified. I don't know how to change it. Any ideas?
If you meant that you're left-handed, I don't know of an easy way to change that. LOL.
If you're referring to the formatting of the messages in posts on this board, that's built into the code that operates the board, and left justification is the standard default formatting. I don't recall ever seeing a discussion board where left justification wasn't used.
I suppose that if I searched through the code long enough, I might be able to find where it could be changed to right justified, but that would look very unusual, and surely someone would complain about that. LOL.
I'm guessing that we're having a communication problem, because surely that's not what you had in mind.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Hi Lesley, sorry I just found your question. I get my pork locally. This site http://www.eatwild.com/products/index.html might help you locate something in your area. Deb
