Hey Paula, it sounds like you eat a lot like I do. However, I have to watch what oil any chips are fried in . it seems like canola oil is bad for me. There is a bar that KIND makes that I eat when I'm in a pinch that is mostly coconut and almonds. I also find that certain foods are okay in SMALL quantites, but if I eat too much of certain things, I will feel " the grumblings" ( like fruit and salad). Small servings serve me better.

I've been eating a lot of Tostitos Natural Corn chips. However, some of us react to the oils in the chips. I would feel much better if my chips had coconut/olive oil in it instead of the others that aren't good for us. I'm sure once I get off my Pepto treatment that the chips will have to go. Once thing good about them is they aren't greasy like some other chips. Wait until your D is gone before starting on any chips. Soft foods are the best for now. Also, no nuts. I'm even afraid to do nut butters right now but hope to try some Almond butter soon.

Hi Leah - I never was a snack eater before having to go GF/DF/SF. I added Lays chips and Fritos, hoping to add fats into my diet because when eliminating gluten, soy and dairy, a lot of calories are lost. I probably have chips 3 to 4 days a week, but I only eat a handful at most. I never thought of the oils being a problem, but I can see how they could be. Also, thank you for mentioning "Kind" brand bars. I have seen them when buying the Lara bars, but never bothered to read the labels. I'll have to check on that brand next time I'm shopping.

Dawn - I don't know if you've read about it here yet, but there's a great GF/DF/SF chocolate coconut milk ice cream available. It helps relieve the cravings for sweets. I have heard that some have had problems with the guar gum ingredient, but I usually eat about 5 tablespoons (not heaped) and put sliced bananas on top. The brand is "So Delicious" and can be found in the freezer section of stores where they also have GF Udi's breads. And, Udi's has a great cinnamon/raisin bread I like. Both of these treats have worked well for me as far as I know.

Well, it's 9:30, and since sufficient amount of sleep is important for all of us for healing, I'm turning in.

I'll have to check out those Lara and Kind bars. And definitely that ice cream! Be my treat on Halloween since all candy is off limits.

Paula, I just found the Udi's cinnamon raisin bread and it's delicious! Toasted, I put apple butter or pumpkin butter on it. It's a nice sweet treat.

I also forgot to mention the "crispy treats" I make. They are just like rice Krispie treats, but I use coconut oil instead of butter and rice chex instead of rice krispies ( i use 7 cups instead of six). They are Great! Better then the original! They last a long time in a zip lock. I have brought them camping and everyone likes them. I made a batch before I went to Lake Tahoe to have them to snack on. My husband loves them.

There is a brand of coconut sorbet I like ... Double Rainbow. But I don't know if it is only in CA. I also have had haagan daz mango, raspberry, and peach sorbets. It all depends on how well you tolerate sugar.

Terri - I'm glad you liked getting some ideas for treats!

Leah - those all sound great! When you say "crispy treats" are you saying you can use marshmallows? I guess I never checked to see - are marshmallows just sugar? I haven't tried any yet. Can you list quantites of the coconut oil, rice chex, and marshmallows and whatever else is in them? It's been soooo long since I've made rice krispy bars and I don't remember. I'd have to go to the store to read the box of rice krispies to find out what was in those.

I'll have to see if Double Rainbow is in my area. Sounds very good too.

Wondering about the marshmallows as well. Gosh....sure would love to stick one of those in my mouth right now. Problem is I wouldn't be able to stop...lol! Probably how I got in this nasty state to begin with.....binging on junk food. And...gosh....the sorbet sounds sooo good. My mouth is watering over here!

Okay, I feel terrible telling you guys to eat marshmallows, but here goes : the ingredients are: corn syrup,corn starch, water, gelatin, natural and artificial flavor ( ?), tetrasodium pyrophosphate

I just melt one bag of marshmallows with 3 Tbsp. of coconut oil. Then I stir in 6-7 cups of rice chex. Pour it into a greased pan and press it down. Cut into squares after it hardens.

If you are not sure you can handle marshmallows, maybe you should try one or two on it's own and see how you do - before making a whole batch.

Brilliant! Never thought of making rice krispie treats with coconut oil. I have rice chex that I never eat at home, so now they'll have a purpose...until I buy a box of GF rice krispies! Marshmallows have long been a "safe" treat in my house. Some brands have less offensive ingredients than others (primarily food coloring which we avoid).

Leah - I have Rice Chex and Corn Chex in my house. My husband eats the rice chex, and I seldom eat either but when I do I eat the corn chex. I looked at the ingredients on both boxes. The rice chex have tocopherols but the corn chex don't. I looked up tocopherols in the search here and see that might be soy. So.... I'll try making my krispy treats with the corn chex.

Paula, I seem to remember that recently someone called to ask the Chex people what source their tocopherols comes from and they e-mailed back stating that it comes from corn. Let me know how you like them. I think they are better than rice krispie treats.

Leah - that you for the heads up on the rice chex. To be honest, I don't even know what tocopherals are??!!!

And... I have never heard of pumpkin butter. Is that just in a store by apple butter?

Yes, I want to know where to find apple and pumpkin butter. They both sound so good.

@Leah...thanks for the recipe for the Rice Chex treats.

@Dawn...and yes, Rice Chex's tocopherals are corn based...yay! I think they add it in to maintain freshness. It's Vitamin E, I believe? I see it a lot in fish oil pills.
