Pumpkin Bread

I made this recipe today after a friend gave me a couple of pie pumpkins. http://www.seriouseats.com/recipes/2010 ... ecipe.html I tweaked it a bit but it's very good. The guy who runs the site used to work for Cook's Illustrated where he developed some very good recipes for them. I used my own flour blend that contains rice flour and corn starch, I cut the sugar back (I used 1/2 c of maple sugar, 1/2 c of sugar and 10 drops of stevia glycerite), and probably used 2/3 c. of oil. I would probably try some coconut oil next time. I couldn't keep my four year old grand out of it.

Just use your own preferred flour blend, whatever that might be.

Nothing right now Tex. Nothing seems to work. I have given up everything except the occasional paleo muffin.
