Hot Chocolate

1/4 cup unsweetened cocoa powder
2 cups lite coconut milk
2 cups regular coconut milk
1/2 cup light, mild honey OR 1/2 cup organic agave nectar, or sweetener of your choice( I say taste, test)
1/8 teaspoon salt
1 teaspoon vanilla extract

Mix cocoa powder, 1/2 cup lite coconut milk, salt and honey OR agave nectar, or sweetener of your choice, in medium saucepan. Whisk to blend.
Heat on medium high and continue to whisk until mixture comes to a boil.
Add remainder of coconut milk, heat on medium and whisk.
Do not bring this to a boil.
Remove from heat and add vanilla extract.
