Non-Dairy Whipped Cream

Non-Dairy Whipped Cream

Refrigerate 1 can of coconut milk (a full day so the fat & water can separate)
Then open the bottom of the can of coconut milk and skim off the fat ( you only want to use the thickest part of the
coconut milk)
In the same bowl add 1 teaspoon of vanilla and 1 tablespoon of sweetener
Beat on high until it thickens to whipped cream consistency
Store in the fridge to keep it thickened
