Is peanut butter "safe"
I know, I know, I should be living on potatoes and bananas until I'm in "remission," but I'd love to find easy foods that pack more of a punch calorie wise than. I *think* I'm okay with almond butter, although it's hard to tell since I'm still frequenting the facilities on 7-9 peptos a day (not as frequent as before, though! Yay!) But almond butter is soooo expensive! And we're going on a road trip for Thanksgiving--one I'd love to have convenient foods I can take with me in case I can't find anything while out of town.
So, how many of you are able to eat all natural peanut butter? I'm trying to decide if it's worth the risk in trying.

Almond butter works fine for me. I can eat moderate amounts of peanut butter too but I'm so spoiled because the peanut butter doesn't hold a candle to the taste of almond butter. My dessert every night is a bigg spoonful of almond butter with a bit of honey drizzled over it.
Since I seem to tolerate some beans I've been making hummus. Of course you have to tolerate sesame and I lace it with chiles too. An an occasional corn or potato chip or a rice cracker with hummus makes me feel like I can still have chips & dip.

Maybe par-boil some thick potato slices in water till about 2/3 done. Put them in a bowl with some olive oil, salt & pepper. Mix it up until it is kind of roughed up, put it on a cookie sheet, add a little extra olive oil for good measure and nuke it at about 450 till brown on the bottom. Flip and brown the other side. I love them hot or cold. Take a bunch in the car for your trip. No refrigeration needed. Take ketchup packets but don't squirt it all over your car!

i use a rice protein powder in rice milk with organic cocoa. I use this for lunch meetings at work or if i am out for the day.
when i was travelling for work, pre cooked chicken with rice crackers (i have a small cooler/esky bag and small freezer bricks to keep the chicken cold)
maybe make some banana bread/muffin type thing based on your safe ingredients.
make some gooey/sticky rice with brown sugar and then when you want to eat it, mash a banana in it

Peanut butter was the first food I eliminated after "the big four": gluten, soy, eggs and casein. I used sunflower butter as a substitute for quite a while. It's available w/o tocopheral at Trader Joe's, and isn't much more expensive than peanut butter.
