Tangy/Sweet Crockpot Chicken- Sweet Potato Baked Fries

Tangy/Sweet Crockpot Chicken- Sweet Potato Baked Fries

Note: This is one of Dee's recipes. It was transferred from Dee's blog.

1 medium onion, chopped
1-1/2 teaspoons minced garlic
3 pounds skinless chicken
2/3 cup ketchup
1/3 cup packed brown sugar
1 tablespoon chili powder
1 tablespoon lemon juice
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes
2 tablespoons cornstarch or arrowroot
3 tablespoons cold water
In a 4-qt. slow cooker, combine onion and garlic.
Top with skinless chicken.
In a small bowl, combine the ketchup, brown sugar, chili powder, lemon juice, basil, salt, pepper and red pepper flakes.
Pour over chicken.
Cover and cook on low for 6 hours.
Remove chicken and keep warm.
Transfer juices to a saucepan.
Combine cornstarch or arrowroot and water until smooth.
Stir into juices.
Bring to a boil.
Cook and stir for 2 minutes or until thickened.
Serve over chicken.

Potatoes
4 medium sweet potatoes, peeled and cut into fries
2 tablespoons extra virgin olive oil
salt/pepper to taste
Heat oven to 400 degrees F.
Toss sweet potato fries with EVOO, salt/pepper.
Place on cookie sheet.
Bake for 20 minutes.
